Pavlova with strawberries toppings:)

I have a container of egg whites sitting in my fridge for the longest time already and as I have bought a couple of packets of fresh strawberries today (yes, they are expensive!)  I thought I'd put the egg whites to good use and so decided to bake a pavlova with strawberries toppings! I find it on the sweet side but the tart strawberries kind of balance of the sweetness some so it was in fact quite delicious.  Luckily, the boy liked it and ate most of it...

Topped with whipped cream and sliced strawberries, and dusted with icing sugar which melted quite rapidly as you can see!

Managed to cut the pavlova without breaking it apart, phew!

 Crispy crust and soft chewy center,  quite a delight to eat:)

Ok the recipe is pretty simple, I followed Wendy's recipe where she has taken the trouble to apportion to a make a small pavlova.

Ingredients for pavlova:
120g egg whites (from about 4 eggs)
200g castor sugar
2 Tbsp cornstarch
1 tsp vinegar
2 tsp vanila (I forgot to add this)

Preheat oven to 180 DegC.
Beat egg whites until still.  Beat in the sugar slowly until meringue is stiff.  Add cornstarch and beat to mix (about 10 sec) and then fold in vinegar.
Pile the meringue on to a parchment lined baking sheet or a silpat if you have one. Roughly make it into a 7inch round meringue and smooth the sides and top as best you can.
Put it into the preheated oven and close the door. Immediately adjust temperature to 130 DegC and bake for 1 hour and 15 minutes. Cool completely in oven with door slightly ajar before using.

200ml whipping cream
1 Tbsp sugar
200g strawberries (sliced or cut into chunks)

Beat whipping cream until almost stiff before adding sugar. Continue beating until stiff.
Spoon cream onto cooled meringue and topped with strawberries.
Serve immediately.

Pity can't keep this dessert for long, have to finish it once the toppings are piled on!
