Saw the chef making this on TV and Fu-yi being a great lover of prawns, got inspired to cook it. I told him I can help as long as he does the peeling of the prawns. He said ok but only managed to peel half the amount...sigh! boys! Anyway, I digressed... the fritters were made from beaten till stiff eggwhite mixed with flour and then add the roughly chopped prawns into it then fry immediately.
