Sweet Sour Pork ribs and chicken too


I have bookmarked this recipe as soon as I saw it on Jen's Blog, Tastes of Home, but somehow did not get the chance to cook it until now.  Bought two spareribs from the market this morning and got down to marinating it for dinner.  I have basically followed Jen's recipe except substituting the sugar with plum sauce and also I realized I had ran out of ketchup while preparing the sauce, therefore, making do with tomato paste and chilli sauce instead.  The result was delicious and the boys declared this dish to be delicious!



The recipe below is exactly what I have used...you can visit Jen's blog for the original recipe:)

2 pieces of very meaty spareribs, cut to about 2 inches length
4 cloves garlic, sliced thinly
2 tablespoons soy sauce
2 tablespoon corn flour
2 egg whites, lightly whisked

Marinate the spareribs with all the ingredients above except egg whites for at least an hour.

Batter for coating ribs:
3 tablespoons AP flour
6 tablespoons of water

Mix the flour and water together until combined and lump free.

Sauce:

2 tablespoons white vinegar (I used Yuen Chun brand too)
2 tablespoon tomato paste
2 tablespoon chilli sauce
2 tablespoon sour plum sauce
4 cloves garlic chopped finely
2 tablespoon oil

Method:

Dip the spare ribs first in whisked egg white then in the batter and deep-fry till cooked. You may use medium heat after the oil has been heated up. Next, remove the oil from the wok, leaving about a tablespoon for cooking the sauce.

 To prepare the sauce, mix the white vinegar, tomato paste, chilli sauce and sour plum together to combine. Put the 2 tablespoons of oil in the wok, fry the chopped garlic until fragrant. Pour in the sauce mixture and allow to come to a boil before returning the deep-fried spare ribs into the wok and stir around until well coated with sauce. Do not to add water into the sauce. Dish out on to a plate, and serve hot with white rice.

Mmmmm...so delicious with rice:D

I did indeed cook this again a few days later but using chicken breasts instead of ribs and the result was just as good!
