Last week...


had been raining cats & dogs ...this was the typical scene on the long road back home every time it rained...sigh! Don't get me wrong, I felt thankful for the rain for helping to cool the hot temperature...plus I can still remember the times when water rationing was enforced because of very dry season...guess we can't have it both ways huh? Oh well,  I think it's better to have rain and face the traffic slowdown rather than another water rationing!

And this was one of my lunches during the past week.  Lemon/cheese/butter cupcakes

and this is something I love to bake because it's so easy and light yet delicious ~ Pandan Chiffon Cake with poppy seeds.

  1. Hello Jeannie. Sorry the weather hasn't been kinder to you. Personally I somewhat look forward to some (not most) rainy days...so that I can get my work done with not too many distractions;o)
    Note to self...find out where to get pandan?

  2. I just picked up some pandan extract today at my Asian market! I have plenty of poppy seeds too! This looks so tempting! Yum!
    We are coming up on our rainy season, every afternoon in the summer after it heats up. Spring is usually our driest and we have brush fire hazard warnings and water restrictions! When it rains all day it can get to you!

  3. Here, raining almost every evening yet still very hot! No doubt, our mother earth is very sick. I'm still trying to reduce the usage of air-cond. Your chiffon looks really tempting! Hope I oculd have a slice. However, have a nice weekend.

  4. I love the lemon, cheese and butter cupcake, it's such an interesting combination but I can definitely see that it would work.

    Isn't that the way with weather? If it's raining you had plans for outside and if it's dry it's too hot!

  6. @Claudia...I guess I'd better be grateful for the rain but sometimes bumper to bumper traffic crawl can be very frustrating, especially when you meet inconsiderate drivers who keep changing lanes everytime the traffic moved an inch.
    Good luck in your quest for pandan leaves...another alternative would be the essence.

    @Lyndsey...Hooray for your success in getting the pandan leaves...looking forward to seeing what you can do with them:)
    I know how it was to have water restrictions..thank God I have only encountered that once!

    @Kristy...It is very humid and hot here too even though it rained most evenings.

    @ICook4Fun...yes if you like the extra crunch the poppy seeds gave to the cake, you'll love this.

  17. Traffic looks just like that when it rains here...I have been planning on making a pandan cakes for a while now...I already have the extract...it is sort of hard to find here...I had a time trying to find it....Your cake looks great!

    @Juliana....Don't worry about the weather, I am already used to it, just that sometimes it does gets me down especially when I am in a hurry to get home.

    @Bo...Thanks! Looking forward to seeing pandan cakes in your blog, I would try to use fresh juice instead of extract but since you can't get any, then that will have to do.:D
