Sweet Potato Bread





Followed the recipe from here but made it into a loaf and some into buns with cream cheese fillings left over from my last bake.

The texture is pretty springy. Could be due to the addition of too much sweet potato. Add a full 300g of it! Well the recipe did not state the weight except saying a sweet potato and I have all these little baby sweet potatos which I just baked the whole lot and mashed them all in. I shall have to adjust the amount of sweet potato the next time round. But this recipe yields a very soft bread.
