Stringbeans omellete


Cooked this simple dish for dinner lastnight. It's a good way to get the boys to eat their vegetables. Just dice up about 10 stringbeans, mince some garlic (about 2 cloves will do), heat about 2 tablespoons of corn oil in a nonstick skillet, throw in the garlic to fry till golden brown and add the beans and a pinch of salt and stir fry for a minute or two. Then pour in some lightly beaten eggs (I use 5 eggs). Turn over after a couple of minutes and your omellete is ready.
