Chocolate Cupcakes....with recipe
More chocolate cupcakes!Using the same recipe but in cups. Ok, for my own easy reference, below is the recipe:-
6 eggs, separated
2 oz (57g) cocoa powder (I used Van Houten)
6 oz (170g) self raising flour
2.2 sticks (250g) salted butter
7 1/2 oz (210g)sugar
1/8 tsp salt
1 tbsp chocolate liquor (optional)
Here's what you do:-
Preheat oven to 180 degree C (356 degree F).
Beat butter and sugar till light and creamy.
Add egg yolks one at a time, beating well after each addition.
Add liquor if using.
Fold in sifted flour, cocoa powder and salt. Mix well.
Whisk egg whites in another clean bowl till stiff peak. Fold them into the chocolate batter. Make sure the batter is well incorporated, without any spots of eggwhite visible.
Scoop batter into papercups 80% full or in a 13 x 9 inch or 10x10 inch cake tin and bake for around 20 - 30 mins. Less time is needed if you bake them in cups.
Remove from oven and let the cake cool for 10 min in the tin. Flip over onto a cooling rack and let cool completely.
