Made these babies this morning. Texture is great, taste is delicious... the pictures said the rest...
200g castor sugar
1 tsp salt
Combine together the following:-
125ml UHT milk (I used fresh milk)
1 tablespoon orange juice
1/2 tsp vanilla essence
250g superfine flour (I used multipurpose flour)
2 tsp baking powder
1/2 cup chopped cranberries (keep some to toss on top of the cakes)
This is how you do it:-
Preheat oven to 180 degree Celsius.
Cream butter and sugar until light and creamy. Next add eggs one at a time, beating well after each addition. Fold in milk and flour alternatively until all used up. Lastly then add cranberries and mix well.
Scoup into muffin cups and toss some cranberries on top. Bake for 25 minutes or until done.
Yields 12 cupcakes
